One of my favorite goddies to make year round is zucchini bread. It is perfect for when I have guests over to have with breakfast, to make for co-workers or a great hostess gift. What I also love about this recipe is a) it’s super easy and b) you can easily substitute bananas or pumpkin to make banana or pumpkin bread. The recipe:
In first bowl, combine these ingredients and mix until smooth:
1 1/2 cups of sugar
1/2 cup of vegetable oil
1 tsp of vanilla
2 eggs
In second bowl, combine these ingredients until smooth:
1 3/4 cups of flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp all spice
1/2 tsp of salt
1/4 tsp of ground cloves
Mix both bowls together until smooth and then add:
1/3 of a cup of water
1 cup of shredded zucchini
Mix and pour into a bread baking dish and bake for 1 hour at 350 degrees. Take it out and put a knife through the middle to make sure it’s done.
