One of my favorite goddies to make year round is zucchini bread. It is perfect for when I have guests over to have with breakfast, to make for co-workers or a great hostess gift. What I also love about this recipe is a) it’s super easy and b) you can easily substitute bananas or pumpkin to make banana or pumpkin bread. Try it and let me know what you think and catch more recipes here!

The recipe:

In first bowl, combine these ingredients and mix until smooth:
1 1/2 cups of sugar
1/2 cup of vegetable oil
1 tsp of vanilla
2 eggs

In second bowl, combine these ingredients until smooth:
1 3/4 cups of flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp all spice
1/2 tsp of salt
1/4 tsp of ground cloves

Mix both bowls together until smooth and then add:
1/3 of a cup of water
1 cup of shredded zucchini

Mix and pour into a bread baking dish and bake for 1 hour at 350 degrees. Take it out and put a knife through the middle to make sure it’s done.
